Most messengers point at a person through an identifier, a phone number or an account name. SimpleX Chat is built without user identifiers at all, and that absence is the claim it rests on: there is no handle to tie a set of conversations back to one person. Messages travel end to end encrypted, and the same conversations follow you across the iOS, Android and desktop apps. Anonymity by default does mean giving up conveniences that other apps build on top of a stable identity, so arriving from one of them takes some adjustment.
